It has been celebrated in various forms including salads, chutneys or as the steaming hot Mooli Parantha at breakfast.
However, this long taproot vegetable has a lot to offer in terms of both health benefits and taste.
It is a nutritive vegetable that promises numerous health benefits. With the presence of Vitamin C, copper, potassium, and magnesium, a radish has the ability to cure jaundice and digestion issues. Also, its anti-congestive properties help you to avoid cold and flu. As far as taste goes, a radish isn’t and shouldn’t be confined to salads only.
Here are some healthy and easy recipes that will make you see Radish in a whole new way:
Radish Soup with Tofu Cream
Total Time – 1 Hour
Ingredients Required:
- 2 medium-sized peeled radishes
- 1 straw of spring onion
- 1 Tbsp vegetable oil
- 20 gm chopped leeks
- 20 gm chopped celery
- 1 tsp shredded ginger
- 1/2 litre vegetable stock
- 1/2 Cup of Orange Juice
- 1 Tbsp of miso paste
- 1 bunch of minced spinach leaves
- 1 tsp soya sauce
For the Cream:
- 50 gm Tofu
- 1 tsp miso (A Japanese seasoning)
- 1 Tbsp honey
- 1/2 Cup of Orange Juice
- 1 tsp orange zest
- Togarashi pepper (A Japenese condiment) or red chilli pepper to taste
- A handful of bean sprouts – for garnishing
How to make:
- Heat oil in a pan and sauté radishes, and spring onion greens.
- Add chopped celery & leeks and mix it well.
- Add the shredded ginger.
- Deglaze the mixture using orange juice.
- Add a huge spoon of miso paste.
- Stir it nicely and add the vegetable stock further.
- Bring to simmer over medium-low heat.
- Exalt with orange zest.
For the Tofu Miso Cream:
- Add tofu, honey, orange juice, and 1 tbsp of the soup in a mixer and blend them well.
- Mix the tofu miso cream and add soya sauce, spinach leaves, togarashi peppers, a pinch of salt to the soup.
- Bring it to boil.
- Garnish the soup with bean sprouts.
Mooli Bhurji
Total Time – 40 minutes
Ingredients Required:
- 2 large-sized radishes along with the leaves
- 2 Tbsp mustard oil
- 1 tsp cumin seeds
- 1/8 tsp asafoetida
- 1 tsp sugar
- 1/2 tsp chilli powder
- Salt to taste
How to make:
- Wash the radishes and their leaves thoroughly and chop them well.
- Heat oil in a pan and add cumin seeds & asafoetida to it.
- As soon as they start to splutter, add the grated vegetables to the pan.
- Add sugar, salt, chilli powder and mix them well.
- Stir-fry the mixture till the leaves are slightly limp but still crunchy.
- Serve hot
